Grilled Pork Tacos with Peach Salsa (minus pork for low protein version)


 

This recipe was a HUGE hit with all members of our family.  My daughter who has PKU asked for seconds and then thirds, and my non-PKU son loved it too (he is our picky eater).  Again this is a great recipe because the entire family can eat it.  This would be a great one to take with to a pot luck or when having family gatherings because everyone is eating the same thing with minor modifications.  This recipe would also be great for anyone who doesn’t want to eat “differently” from everyone else.  

 

Ingredients:

 

1 small bunch of cilantro

2 cloves garlic, finely chopped

2 limes, juiced

4 peaches, chopped

4 boneless pork chops, cut into pieces

1 medium red onion, finely chopped

Tortillas (low protein tortillas)

Salt

Pepper

1 tsp chili powder

1/8 tsp garlic powder

1/8 tsp onion powder

Olive oil

 

Directions:

 

Combine salt, pepper, chili powder, garlic powder, onion powder in a bowl.  Add chopped pork chops and mix to coat.  In a skillet cook pork chop pieces until cooked thoroughly and set aside when done.  In a bowl combine, cilantro, garlic and set aside.  Coat a frying pan with olive oil, and add peaches and cook until soft.  Add cooked peaches and lime juice to cilantro, garlic bowl, and add cilantro.  Mix thoroughly.  Place peach mixture into a low protein tortilla.  

 

For the rest of the family use regular tortillas and add the pork to their tortillas.
