Grilled Sausage Tacos with Spicy Charred Peppers & Pineapple Salsa (minus sausage for low-pro)

 I wrote in a previous post how I see so many families with children who have PKU struggling with being a short order cook, or struggling with not having variety in their child’s diet, etc.  So here is another recipe that I adapted for our family members with PKU.  This recipe is pretty easy to prepare and very yummy.  

Grilled Sausage Tacoes with Spicy Charred Peppers and Pineapple Salsa (minus the sausage)

Ingredients:

Cilantro

Green onions, two small bunches

2 Jalapeño peppers, seeded and sliced

Limes

Pineapple, whole, cut into pieces

Pork sausage

2 red bell peppers, seeded and sliced

Tortillas (low protein tortillas for those who need a “lower version”)

1/8 tsp chili powder

1 tsp cumin

1 tsp salt

Extra virgin olive oil

Directions:

Wash and dry fresh produce.  Cut the peppers into quarters lengthwise (after cooking cut them smaller pieces).  

Heat a grill pan, grill or skillet over medium heat.  Grill the veggies until tender.  Once tender, remove and place in bowl with olive oil, salt, cumin, chili powder, cilantro.  

Cook sliced sausage.

Place salsa mixture in tortilla shells and serve.  For high protein family members you can add the sausage.
