Crockpot Fajitas


 Here is another recipe that can be made to feed the entire family with some modifications as you cook it.  

Crockpot Fajitas

Ingredients:

  • 4 boneless, skinless chicken breasts (for high protein)
  • 3-4 bell peppers, seeded and chopped
  • 1-2 onion thinly sliced
  • 14 oz can diced tomatoes
  • 2 tsp cumin
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Tortillas (low protein tortillas)
  • Guacamole (this can be used for the low protein version dependent on protein/phe intake)
  • Sour cream (high protein)
  • Cheddar cheese (low protein cheese)
This can be made one of two ways.....one would be by cooking the chicken in some diced tomatoes in one crockpot (cook on high for 6 hrs) and the green peppers, onion, tomatoes and spices in another-if doing this method you will need slightly more diced tomatoes than what is called for above (cook on low for 1-2 hrs depending on your crockpot....you want to cook until veggies are soft).

The other way of cooking this is to add the chicken, 3 bell peppers, 1 onion, diced tomatoes, and spices in one crockpot  (cook on high for 6 hrs).  Before serving remove the chicken and shred and add back to the crockpot and stir.  

In another crockpot add one bell pepper, one onion, and a little bit of spices (cook on low for 1-2 hrs until veggies are soft).  

Fill tortillas and top with guacamole, sour cream and cheddar cheese for high protein version.  For low protein version use low protein tortillas, low protein cheese, and guacamole if your diet allows it.
