Grilled Zucchini and Hummus Wrap


Here is another recipe that I have adapted to meet the needs of people with PKU and people without.  It is a great recipe so that everyone can eat the “same” with a few modifications and you do not have to feel like a short order cook.  

In our house, my daughter is on the simplified diet, so we do not count fruits and veggies, so you or your child’s needs might be different.

Grilled Zucchini and Hummus Wrap

Ingredients:

  • 1 lg zucchini, chopped
  • 1/2 cup sliced onion
  • 1/2 cup ricotta (this may be left out for those with PKU or you can try a low protein version)
  • Cooking oil
  • 1/2 cup kale, stemmed and broken into pieces
  • 1/2 tomato, sliced
  • Tortillas (low protein can be used)
Directions:

  1. Preheat oven to 375F.....when ready place tortillas directly on the oven racks and cook until rack marks show.
  2. Place a skillet over medium heat and add the oil. Toss the zucchini and onions onto the skillet and fry until golden brown. 
  3. Stir in the kale and cook until it wilts.
  4. Pull the tortillas from the oven and smear with hummus and ricotta cheese (this would be for the non-PKU version). 
  5. Add the zucchini mixture and tomatoes.
  6. Roll the tortillas tight.
