Caprese stuffed zucchini boats
Ingredients:
- 3 Medium zucchini
- 1 Package ramen noodles (low protein noodles)
- 1 Tomato finely chopped
- 1/2 Cup Shredded mozzarella cheese (low protein cheese)
- 2 Tbsp Fresh, chopped basil
- 1 Tbsp Olive oil
- 1 Clove garlic, minced
- 1/2 tsp Salt
Directions:
- Slice the zucchini in half and scoop out the seeds, leaving the shell. Cut off the edges and trim to fit in the air fryer.
- Cook ramen noodles in boiling water for 2 minutes (or cook low protein noodles according to package directions), drain noodles and place in a large bowl. Add the tomatoes, cheese, basil, oil garlic and salt.
- Divide the filling between the zucchini shells.
- Preheat air fryer to 360 degrees and cook in batches for 15-20 minutes.
