Caprese stuffed zucchini boats (made in an air fryer)

 Caprese stuffed zucchini boats 

Ingredients:

  • 3 Medium zucchini
  • 1 Package ramen noodles (low protein noodles)
  • 1 Tomato finely chopped
  • 1/2 Cup Shredded mozzarella cheese (low protein cheese)
  • 2 Tbsp Fresh, chopped basil
  • 1 Tbsp Olive oil
  • 1 Clove garlic, minced
  • 1/2 tsp Salt
Directions:
  1. Slice the zucchini in half and scoop out the seeds, leaving the shell. Cut off the edges and trim to fit in the air fryer.
  2. Cook ramen noodles in boiling water for 2 minutes (or cook low protein noodles according to package directions), drain noodles and place in a large bowl. Add the tomatoes, cheese, basil, oil garlic and salt. 
  3. Divide the filling between the zucchini shells. 
  4. Preheat air fryer to 360 degrees and cook in batches for 15-20 minutes.
