Thanksgiving fun

As I sit here thinking about Thanksgiving which is tomorrow I am so excited about everything I have planned for my daughters.  Every holiday since my older daughter with PKU was born I have always made it a point to make sure there were lots of goodies on the table for her.  I knew this was important because even though I believe the holidays really should focus more on the company we keep there is also such a huge focus on food.  One thing that has always been important to me is to make sure the girls have enough options to choose from, and this year is no different.  We will have some of our old favorites and will also be adding a few new recipes to try.

This year I am so excited because I found some low protein cheeses and low protein crackers to put out on our snack table.  Genavieve LOVES crackers and will ask for a couple of them while waiting to eat.  I know she loves crackers, but obviously she needs to limit the number of them she can have.  This year I do not have to limit them, and she gets a better selection of cheeses to go with it (in the past she only had cheddar).  This year I found several of them....we decided to try two of the ones I found.  I got a garlic herb cheese and a pepper jack version.  I let her sample them tonight.  She absolutely LOVES them, and the best part is they each have zero grams of protein so she can eat as much as she wants, and the crackers are only .3 (read that as point three and not three) grams of protein for 9 crackers.

I also found a recipe for mock turkey that is made out of jackfruit, so this year we are going to try that as well.  I am really hoping the girls like it.

Some of the other items on our low protein menu include:
  • Sweet potatoes
  • Onion potatoes
  • Mashed potatoes
  • Corn
  • Orange fluff
  • Raspberry peaches
  • Crescent rolls
  • Pound cake
  • Low protein strawberry cheesecake (most of the people in our house do not like pumpkin pie....hence this option)
As you can see there are many options out there and a good number of them can be shared with everyone whether they have PKU or not.  If you are a new parent and you are stressed out over the holiday and what your child might eat please remember there are so many options out there.  These are just the options we make.....Happy Thanksgiving.  Hope you have an amazing day.  I know we will!
