Honey Garlic Cauliflower


 As a mom I always hate cooking multiple recipes, and always hated when my daughters had to eat something different simply because they had PKU, so I decided to do something about it by modifying recipes.  Here is another recipe that can be made in both the higher and lower protein versions with small modifications so everyone can eat the same foods.  Depending on the tolerance you can modifying it by using super low protein items such as egg replacer, coconut aminos, etc

Ingredients:

  • 1 cup flour (1 cup baking mix)
  • 2 cups panko breadcrumbs (2 cups low protein bread crumbs)
  • 3 eggs (1 egg with water or egg replacer)
  • 1 head of cauliflower broken into bite sized pieces
  • 1/3 cup honey
  • 1/3 cup soy sauce (1/3 cup coconut aminos)
  • 2 garlic cloves, minced
  • Juice of 1 lime
  • 1 T sriracha
  • 1/4 cup water
  • 2 tsp. corn start his
  • 1/4 cup sliced scallions
Directions

  1. Preheat oven to 400° and line a large baking sheet with foil.
  2. In a large bowl, combine flour (baking mix for low protein) and cauliflower, toss until fully coated. Set up a dredging station: In one bowl, add panko breadcrumbs (low protein breadcrumbs for low protein version) and in another bowl whisk eggs and add 2 tablespoons water (low protein egg replacer or one egg with water). 
  3. Dip cauliflower in beaten eggs, then panko until fully coated. Transfer to a prepared baking sheet and season generously with salt and pepper. 
  4. Bake until golden and crispy, 20 to 25 minutes.
  5. Meanwhile, make sauce. In a small bowl, whisk together cornstarch and water, until the cornstarch dissolves completely. Set aside. 
  6. Combine soy sauce (coconut aminos for low protein), honey, garlic, lime juice and Sriracha in a small saucepan over medium heat. When the mixture reaches a boil, reduce heat and add the cornstarch mixture. Bring to simmer again and cook until sauce thickens, about 2 minutes.
  7. Toss cooked cauliflower in sauce until evenly coated. Return the cauliflower to baking sheet and broil for 2 minutes.
  8. Garnish with scallions and serve immediately.
