Here is another recipe that I have modified to fit the PKU diet. Based upon your dietary needs you can remove some of the ingredients if they don’t fit, and the salad will still be delicious What is nice about this recipe is everyone can eat it, you don’t have to feel like a short order cook, and the person with PKU doesn’t have to eat something different. . (Just as an FYI the photo has chicken).
Ingredients:
- Small shallot, chopped
- 1 T. Raspberry wine vinegar
- 6 oz fresh raspberries
- 1/4 tsp sea salt
- 1/4 cup plus 2 T olive oil
- 5 oz baby arugula
- Avocado, sliced
- 8 oz strawberries, hulled and halved
- 1 yellow bell pepper, chopped
- 1 cup fresh blueberries
- 1/4 purple cabbage, chopped
Directions:
- To make the dressing, pour the raspberry vinegar over the chopped shallot and let it macerate a few minutes.
- Place shallot and vinegar, raspberries and salt in a food process and pulse to form a paste. With the processor running add the olive oil in a steady stream. If you would like a thinner dressing, add up to 1/4 cup water.
- Assemble salad: line a large platter or baking sheet with arugula. Arrange strawberries in a strip, arrange the bell pepper, blueberries, avocado, and cabbage in strips.
- Serve with salad dressing
- For non-PKU family members you can add sliced chicken.
