Stroganoff

 Here is another recipe that can be eaten by the entire family with slight modification.  When I made this recipe I was cooking for only one of my children who has PKU, so I only made one serving of low protein pasta and then reduced the higher protein pasta by that one portion.  This made it easier for me to not have to cook two separate mushroom/onion mixtures.  Then when I combined the ingredients I took out one portion of the mushroom/onion mixture for the low protein version and poured the rest into the high protein version (and then I added the yogurt and ground beef).  

Ingredients:

  • 1 lb Ground beef (for high protein version)
  • 1 1/2 Cups Greek yogurt 
  • 4 Cloves, Garlic
  • Onions
  • Pasta (low and high protein)*
  • 2 Cups whipping cream
  • 1 Cup Broth
  • 1 lb Mushrooms
  • Cooking oil
  • Salt and pepper to taste
Direction:
  1. In a frying pan brown the ground beef for the high protein portions.
  2. While beef is cooking, in another pan, place a small amount of cooking oil, add garlic, and onions and cook until tender.  
  3. Add mushrooms to onion mixture and cook until softened.
  4. Add broth, and whipping cream to the mushroom/onion mixture and cook until hot.  
  5. Combine ingredients as follows:
    • High protein version: cooked ground beef, portion of mushroom/onion mixture, Greek yogurt, pasta.....heat and then turn off burner and allow it to sit for 5 minutes
    • Low protein version: portion of mushroom/onion mixture, low protein pasta.....heat and then turn off burner and allow it to sit for 5 minutes.
