This recipe is another one that can be eaten by the entire family with minor modifications and without being a short order cook. The preparation on this one was also pretty fast, so within minutes we had it in the oven cooking.
- Basmati rice (low protein rice)
- 2 crowns broccoli
- 16 oz chicken or vegetable broth
- Crumbled feta cheese
- 4 cloves garlic
- Shrimp
- 2 medicum zucchini squash
- Butter
- Onion powder to taste
- Pepper to taste
Directions:
- Cook rice with broth instead of water.
- Cut broccoli crowns and stumps into bit sized pieces and put on a baking sheet.
- Cut zucchini in half lengthwise, and then into half moon shapes. Add to the baking dish
- Add garlic (if you are making high and low protein version divide the vegetables between two baking sheets).
- Add shrimp to the baking sheet with the high protein portions and top with feta cheese.
- Dot each with butter
- Bake for 20 minutes in a 400º oven or until vegetables are soft.
- Serve veggies with rice.
