Baked broccoli and zucchini (with shrimp and feta for high protein)

 This recipe is another one that can be eaten by the entire family with minor modifications and without being a short order cook.  The preparation on this one was also pretty fast, so within minutes we had it in the oven cooking.

  • Basmati rice (low protein rice)
  • 2 crowns broccoli
  • 16 oz chicken or vegetable broth
  • Crumbled feta cheese
  • 4 cloves garlic
  • Shrimp
  • 2 medicum zucchini squash
  • Butter
  • Onion powder to taste
  • Pepper to taste
Directions:
  1. Cook rice with broth instead of water.
  2. Cut broccoli crowns and stumps into bit sized pieces and put on a baking sheet.
  3. Cut zucchini in half lengthwise, and then into half moon shapes. Add to the baking dish 
  4. Add garlic (if you are making high and low protein version divide the vegetables between two baking sheets).
  5. Add shrimp to the baking sheet with the high protein portions and top with feta cheese.
  6. Dot each with butter
  7. Bake for 20 minutes in a 400º oven or until vegetables are soft.
  8. Serve veggies with rice.
