When I made this recipe we chose not to put the jackfruit in it because my daughter is not a fan of it.
Ingredients:
- Jasmine rice (low protein rice)
- 1 yellow onion
- 2 lg poblano peppers
- 2 limes
- 1 can of pineapple chunks or tidbits
- 1 lb ground beef (for high protein version only). For low protein option you could use jackfruit
- 2 T. Southwest spice
- 4 oz Sour cream (low protein sour cream)
- 1/4 c. Beef stock concentrate (can use vegetable stock concentrate)
Directions:
- Preheat oven to 450º.
- Cook rice according to package directions
- While rice cooks, zest and quarter limes. Half, peel and cut onion into small wedges.
- Core and deseed the peppers and thinly slice them thinly.
- Drain pineapple reserving liquid. Peel and finely chop the garlic.
- In a small bowl, combine sour cream (or low protein sour cream if the diet cannot handle this amount of phe/protein), pinch of lime zest, and squeeze of lime juice.
- Add water 1 tsp at a time until mixture reaches drizzling consistency.
- Toss onion and poblano peppers on a baking sheet with a drizzle of oil and salt. Roast in the oven until softened and lightly charred (approximately 18-20 minutes).
- Meanwhile, heat a drizzle of oil in a medium pan over medium-high heat. Add pineapple and cook, stirring occasionally until lightly charred (3-4 minutes). Season with salt and pepper and turn off heat.....transfer to a plate.
- Heat another drizzle of oil in a frying pan. Add beef, southwest spice and a pinch of salt.
- Cook, breaking up the meat into pieces until browned and cooked through.
- Add garlic, cook for 30 seconds (for the low protein version place jackfruit and garlic and a small amount of oil in a pan and cook)..
- Add beef (or vegetable) stock concentrate and 1/4 cup reserved pineapple juice (depending on the portion size you are making low protein you will need to adjust this amount) then bring to a simmer. Cook until saucy.
- Fluff rice and stir in 1 TBSP butter and remaining lime zest.
- Divide rice between bowls and top with beef, pineapple, poblano, onion and drizzle with lime crema. Serve with a lime slice. (For the low protein portion leave off the beef).
