Easy Broccoli (and beef) bowls


 

This was another hit in our family.  In the photo the high protein version is on the left and low protein on the right.  As you can see everyone’s plates looked the same.  My daughter doesn’t have to feel like she is eating a completely different meal than the rest of the family.  The other reason I loved this recipe (besides because it was very tasty) was that it was super easy and quick to make, and I could easily make the high and low protein versions at the exact same time......no short order cook.

Ingredients:

  • 2 T vegetable oil
  • 2 c broccoli
  • 1 medium onion, chopped
  • 1 sm garlic clove minced
  • 1 can condensed cream of broccoli soup
  • 1/3 c water
  • 1 T soy sauce (or coconut aminos for the low protein version)
  • Cooked white rice (low protein rice)
  • Steak
Directions:
  1. Heat oil, add beef and cook until done. Remove beef from skillet and wipe clean.
  2. Heat oil and add broccoli, garlic and onion, cook until tender
  3. Stir soup, water and soy sauce in a skillet and heat until boiling. Return beef to skillet. Serve over rice.

  6. Stir soup, water and soy sauce or coconut aminos in a skillet and heat until boiling. 
  7. Serve over rice.
