Gumbo

 I made this recipe tonight, and was surprised how it turned out.  The best part was this was very fast to make, and super easy, and everyone’s bowls looked alike (as a parent I know how important it is for my daughter(s) to eat the same foods the rest of the family does so they do not feel different).

Low protein Gumbo

Ingredients:

  • 1 cup vegetable broth
  • 1 cup frozen chopped onion, bell pepper and celery mix
  • 1/4 cup olive oil
  •  3 T. flour
  • 1 garlic clove, minced
Directions:

  1. Cook oil and flour in a Dutch oven over medium heat 5 minutes or until golden, stirring constantly; add onion mix, garlic, and pepper.
  2. Sauté 5 minutes or until vegetables are tender; add broth. 
  3. Bring to a boil; reduce heat, and simmer 10 minutes or until thickened.
* when we made this we added low protein noodles 


High protein Gumbo
 
Ingredients:

  • 1/4 c olive oil
  • 1/3 c flour
  • 2 (8oz) chopped onion, bell pepper and celery mix
  • 2 T minced garlic
  • 1/2 ts pepper
  • 1 (32 oz) chicken broth
  • 1 (10 oz) pkg frozen cut okra
  • 1 (12 oz) pkg andouille chicken sausage, sliced
  • 2 c shredded rotisserie chicken
Directions:
  1. Cook oil and flour in a Dutch oven over medium heat 5 minutes or until golden, stirring constantly; add onion mix, garlic, and pepper.
  2. Sauté 5 minutes or until vegetables are tender; add broth, okra, sausage, and chicken. 
  3. Bring to a boil; reduce heat, and simmer 10 minutes or until thickened.
