I made this recipe tonight, and was surprised how it turned out. The best part was this was very fast to make, and super easy, and everyone’s bowls looked alike (as a parent I know how important it is for my daughter(s) to eat the same foods the rest of the family does so they do not feel different).
Low protein Gumbo
Ingredients:
- 1 cup vegetable broth
- 1 cup frozen chopped onion, bell pepper and celery mix
- 1/4 cup olive oil
- 3 T. flour
- 1 garlic clove, minced
Directions:
- Cook oil and flour in a Dutch oven over medium heat 5 minutes or until golden, stirring constantly; add onion mix, garlic, and pepper.
- Sauté 5 minutes or until vegetables are tender; add broth.
- Bring to a boil; reduce heat, and simmer 10 minutes or until thickened.
* when we made this we added low protein noodles
High protein Gumbo
Ingredients:
- 1/4 c olive oil
- 1/3 c flour
- 2 (8oz) chopped onion, bell pepper and celery mix
- 2 T minced garlic
- 1/2 ts pepper
- 1 (32 oz) chicken broth
- 1 (10 oz) pkg frozen cut okra
- 1 (12 oz) pkg andouille chicken sausage, sliced
- 2 c shredded rotisserie chicken
