Meatballs PKU style

 

Today I decided to try and make meatballs PKU style alongside regular meatballs.  Please forgive my plating….not very good at it, but here are the results.  The type picture is regular meatballs which potatoes and carrots, and below are the low protein meatballs.  

So, how did I make them?  I took some jackfruit and chopped it up very finely, and then added some breadcrumbs (you could use low protein bread crumbs to reduce the phe/protein if you wanted to).  I added some spices, salt, and pepper, and then just fried them in a pan with oil like I did the regular meatballs.  

Genavieve said she liked them and ate them all.
