(Chicken) Jackfruit and broccoli mac and cheese

 

This one might be too high in protein for some individuals the way I made it.  I have tried to share options for reducing the protein further in parentheses.  In our family, all three of my daughters are on kuvan so we are able to incorporate this one.

This one has a lot of steps.  To make it easier before I started I measured out all of the ingredients (the first time I made it I felt like I couldn’t do both skillets with the butter and flour and milk quick enough, so this time I had it all measure out and made it work much more smoothly).  This will create a bit more dishes, but for ease of cooking I found it beneficial.

An added note: the photo doesn’t have broccoli because unfortunately my darling daughter loves broccoli and she ate it raw yesterday (much better option for a snack than some things she could have had) LOL

Ingredients for low protein version:

  • Broccoli (use more or less depending on your preference)
  • 1 T parmesan cheese (could replace with a low protein version to lower the protein)
  • 2 T breadcrumbs (could make your own low protein breadcrumbs to reduce the protein)
  • Low protein pasta
  • Low protein cheese
  • Dash of garlic powder
  • 3 T butter
  • Oil
  • 1 T flour
  • 1/2 cup milk substitute (we use flax milk)
  • Jackfruit
Ingredients for high protein version:
  • 1 lb chicken breast strips
  • 1 1/2 oz panko
  • 12 ounces pasta
  • 4 oz shredded cheddar-jack cheese
  • Garlic powder (to taste)
  • 8 T butter
  • 2 T oil
  • 1/4 cup flower
  • 2 cups milk 
Directions: 
  1. Preheat broiler with rack in the lower third
  2. Cut broccoli into 1/2 inch florets 
  3. Bring large post of water to a boil over high and cook the pasta per package directions (add the broccoli to the pot so it can cook too). When pasta is done reserve 1 1/4 c cooking water for later use.
  4. Pat chicken (or jackfruit) dry; season with salt and pepper.
  5. In a small bowl microwave 4 T butter until melted (1 T for low protein version)
  6. Add panko or low protein bread crumbs and parmesan to each bowl of butter.
  7. Cook the chicken in an oven proof pan until fully cooked.  In another pan cook the jackfruit.
  8. Transfer chicken and jackfruit to a plate. In the skillet you just used melt 4 T butter (for high protein version),…..in the other skillet melt 2 T butter.  Once butter is melted add the flour to each skillet and whisk.
  9. Slowly whisk in milk/milk alternative to each skillet and reserved water (1 c to high protein and 1/4 c to low protein).
  10. Reduce heat whisking occasionally until thickened consistency of heavy cream.  
  11. Whisk in cheeses and garlic powder.
  12. Add noodle and broccoli to the cheese sauce and mix.  Top with panko and brown in the oven (watch so it doesn’t burn).
