Ravioli soup

 

Today was a cold day, so a great reason to make soup.  This soup doesn’t necessarily have a recipe because I change it up every single time I make it depending on what is in my house, and how much protein my daughter needs.  On days she needs more phe/protein I will use all higher phe ingredients….days she needs lower than I will use all lower phe veggies and/or replace the ravioli with low protein noodles.  


The ingredients I used today include:

  • Bouillon (if you are looking for a phe free one I believe George Washington’s is still phe free)
  • Carrots
  • Onions
  • Corn (because I had some left over in the refrigerator that I didn’t want to go bad)
  • Spinach
  • Ravioli (I used a spinach cheese ravioli for the high protein version and a gluten free cheese ravioli for the low protein…..you could use low protein ravioli or even low protein noodles if you wanted to.  For us today her didn’t could include the gluten free ravioli)
Other things you could add to your soup:
  • Broccoli
  • Potatoes
  • Peas
  • Green beans
  • Cooked meat for the higher protein version,……chicken often works well in this recipe
The ingredients can vary based upon what the daily intake is.  The reason I am sharing this is so families can see another way of altering foods to make them appropriate for all family members and no one feels left out.  As you can see in the photo above the left bowl is the high protein version and the right bowl is the low protein (I did give my son a little less “soup juice” since he isn’t super fond of it, and really just likes the veggies and ravioli LOL).

Directions:
Cut up all the vegetables.  You can either add a little oil to a pan and slowly cook them until tender or you could just add them to the pot with the water/bouillon.  Cook the ravioli or noodles according to the package directions.  When done add the pasta to the pot with the broth and veggies and serve.  If you wanted to this is another recipe that you could toss all the ingredients (except the pasta) into a slow cooker and set it and forget it.  

For tonights meal we also had homemade applesauce……the kids and I love homemade……I like to add either nothing to my applesauce or a little cinnamon.  

Several people asked me what brand of gluten free raviol I found…..of course, for some this might be too much phe/protein but we were able to add it in.

*Please remember to calculate the phes/protein in the recipes posted to ensure they will fit within you or your child’s diet.  These recipes fit within my children’s diets, but they may not fit everyone’s needs.  If they are too high in protein consider swapping out lower protein ingredients for the higher ones we have listed.
