The other day I was at the grocery store and was looking through the freezer section and saw Uncrustables. I remembered how much my son loved these, and how my daughter could never eat them because they were simply too high in protein. It got me thinking, and I started to browse amazon and to my surprise I found an Uncrustable maker. It was delivered today, and so I made some for my daughter.
I used the Pepperidge farms thin bread which was the perfect size (very little waste) and then I found a vanilla coconut spread (used this in place of peanut butter) and added a squirt of jelly. When she got home from dance class I told her I made them and she was so excited she ran to eat one. She loved them!!!!!
Of course you could make these with low protein bread, and fill them with whatever is appropriate for your child (or yourself if you have PKU).
I also made some for my son with regular ingredients.
I tossed them in ziploc bags and into the freezer they went, so when the kids want to grab food they are there.
