Today I experimented with making low protein chili based off of a new recipe I wanted to try. I wasn’t sure how it would turn out, but decided to try it anyhow. Although this recipes says it is made in a crockpot I did not make the low protein version in a crockpot simply because it was too small of a portion for the ginormous crockpots I own. Instead I put it in a small pot and simmered it until beans and onions were soft.
This recipes is also slightly high in protein so depending on ones tolerance they may or may not be able to fit this into their diet. Since my daughter is on kuvan we can fit this into our diet. There are a few options for making it even lower in protein (I will put those options in parenthesis).
In the photo the left bowl is the high protein and the right bowl is the low protein version.
Ingredients for high protein:
- 1 lb boneless, skinless chicken breasts with fat trimmed off
- 1 yellow onion diced
- 2 cloves garlic minced
- 24 oz chicken broth
- 2 15 oz cans great northern beans (drained and rinsed)
- I 15 oz can chili beans
- 2 4 oz cans diced green chilis
- 1 15 oz can whole kernel corn (drained)
- 1 tsp salt
- 1/2 tsp black pepper
- 1tsp cumin
- 3/4 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- 4 oz cream cheese softened
- 1/4 c half and half
- An also top with any of the following:
- Sliced jalapeños
- Sliced avocados
- Dollop of sour cream
- Minced fresh cilantro
- Tortilla strips
- Monterey Jack or Mexican cheese
Low protein ingredients:
- 1 T onion
- 1tsp garlic
- 6 oz vegetable broth
- 1/4 c great northern beans
- 1 T canned green chilis
- 1/4 c corn
- Salt and pepper
- Small dash of each seasoning from above
- 1 T cream cheese (could use low protein cream cheese to reduce protein)
- 1 T half and half (could use low protein version such as silk)
- Jackfruit
Place all ingredients except the cream cheese, half and half, and optional toppings in a slow cooker. Cook for about 8 hrs. Remove chicken and shred; put back in crockpot. When done mix cream cheese, half and half, and a small amount of liquid from the chili (the goal is to melt the cream cheese). Add back into the chili and blend. Cook on high for 15 minutes or until chili is creamy and slightly thickened.
*Someone in one of the groups I am in suggested substituting potatoes or carrots for the beans if you want to bring down the protein.

These recipes fit within my children’s diets, but they may not fit everyone’s needs. If they are too high in protein consider swapping out lower protein ingredients for the higher ones we have listed.
