Homemade marmalade and jam

 I know that store bought marmalades, and jams are usually pretty low in protein (some people don’t even count them….we don’t), but that being said there are usually a lot of extra ingredients in them.  This got me thinking especially since my hubby keeps bringing home fruit boxes from the store.  

Last night I decided to pull out my canner, and got a recipe to make orange marmalade with all of the oranges I had on hand.  The marmalade was a bit time consuming because it is something started at night, left to sit overnight, and then finished the next day.  Last night I prepped the marmalade, and then this morning got up nice and early to finish putting them in jars and processing them.  The best part is that my marmalade has oranges, lemons, and sugar…..that’s it.  No artificial anything.



After I got those done it was onto the next project which was creating strawberry jam.  Again the recipe was pretty simple……strawberries, sugar, lemon juice, and pectin.  Into the water bath canner it went, and bam…..strawberry jam. 

And finally, I realized I still had more oranges left…..lots of little mandarins.  Unfortunately these are pretty sour, so I decided to can them and add a sugar liquid to them hoping that would help. 

One of the things I have learned as my daughter’s mother is that I can have fruit sitting in a fruit bowl on the table, and most people will not touch it.  Can it or freeze dry it, and everyone loves it.  

Another thing I decided to do today was prep homemade cereal bars for my kids.  I used coconut milk in some and flax milk in others.  Can’t wait to put these into the freeze dryer in a couple of days and see how they turn out.  My reasoning for making these is because all too often the kids don’t have a bunch of time in the morning and they are running out the door.  Now they can simply grab this and go.
