12 oz package of frozen broccoli
2 cups fresh spinach
2 T mayonnaise
1/4 cup cream cheese (for low protein use low protein cream cheese)
1/2 cup cheddar cheese (for low protein use low protein cheese)
3/4 cup mozzarella cheese (for low protein use low protein cheese)
1/2 tsp onion powder
Directions:
Preheat oven to 350 degrees F
Cook the broccoli according to the package instructions (for this part I just cook all the broccoli together).
Once the broccoli is done, drain and put the low protein portion in pot and the high protein in the other. This is where you will either use high protein ingredients or low protein ingredients.
Low protein: add in the garlic, spinach, mayonnaise, low protein cream cheese, low protein cheddar cheese, onion powder….set aside
High protein: add the garlic, spinach, mayonnaise, cream cheese, cheddar cheese, onion powder.
Using two separate baking dishes….spray each with cooking spray and put the mixture from above in the pan. Sprinkle with mozzarella cheese (making sure you use low protein mozzarella for the low protein one and regular for the other).
Bake for 30 minutes until brown and bubbly. Depending on the type of low protein cheese it may be melt-y and bubbly or it may not.
*Please remember to calculate the phes/protein in the recipes posted to ensure they will fit within you or your child’s diet. These recipes fit within my children’s diets, but they may not fit everyone’s needs. If they are too high in protein consider swapping out lower protein ingredients for the higher ones we have listed.
